Todo est\u00e1 escrito, pero ning\u00fan d\u00eda es igual desde el momento en el que se abre el tel\u00f3n. Cl\u00e1sica e internacional, as\u00ed define Mu\u00f1oz-Calero Calder\u00f3n la cocina de Ovillo, que recoge un recetario tradicional de los lugares que han sido su campo base gastron\u00f3mico. Sus influencias culinarias est\u00e1n bien definidas: Francia y Suiza, como sus escuelas de formaci\u00f3n. Tailandia, donde el cocinero vivi\u00f3 un tiempo, empap\u00e1ndose de su cocina; y Espa\u00f1a, sobre todo Catalu\u00f1a y Pa\u00eds Vasco, donde se ha forjado tambi\u00e9n su car\u00e1cter a los fogones.<\/p>\n<p>La carta de Ovillo es corta, la m\u00e1s corta que Javier Mu\u00f1oz-Calero Calder\u00f3n ha hecho, probablemente, en toda su vida profesional. Porque el objetivo, en un ejercicio de libertad, es trabajar sin ella, y deshacerse de cualquier atadura. Tambi\u00e9n se aleja de las carnes de maduraci\u00f3n extrema y se acerca a la ternera lechal.<\/p>\n<p>En Ovillo hay lugar para la caza, con recetas, como la bolo\u00f1esa de venado, y tambi\u00e9n tienen espacio los guisos, los gui\u00f1os al pasado (unas patatas souffl\u00e9 que hacen viajar en el tiempo) y los productos con denominaci\u00f3n de origen y un toque creativo, como los callos con montgetas. Murcia y sus arroces con pulpo o su gamba roja, Madrid con sus callos y tapas, y Galicia con sus mariscos tambi\u00e9n forman parte de la trayectoria vital de Javier Mu\u00f1oz- Calero Calder\u00f3n, y se incluyen en el recetario presente y futuro de Ovillo.<\/p>\n<p>La temporada ser\u00e1 la que marque el recetario, aunque en su ejercicio de libertad, Javier se reserva el hecho de levantarse caprichoso y encontrar un ingrediente en el mercado que rompa la norma.
